I accidentally bought sweet cream butter instead of regular, so my ghee was not ghee. I didn't originally have curry leaves so I used what I had. It still was very delicious but didn't have the butter popcorn taste until i got some proper curry leaves, that made it amazing. Side note for anyone with kidney stones; the curry leaves put me into a world of pain after…. They're super high oxalate.

I am from the NorthPole and I promise you, pipe tobacco is NOT how Santa smells. Actually it isn’t even cookies, though people up north make some cookies for him as a dessert, Santa’s main course that is left for him, is rice porridge cooked on a lot of whole milk, served in a big bowl with a big «butter eye» and lots of sugar and cinnamon on top. The fragrance from this may be what you misunderstood as cookies… NB! What is called «the North Pole» when talking about Santa himself, Christmas etc., is actually a quite large area. Earlier, during my childhood, the North Pole, and Santas HQ, was in Drøbak, Norway 🇳🇴 (even if he still has an office there for answering mail and other secret Santa stuff that I am not told, not being an elf and all). But, a few years ago, Santa decided he needed more space for all the reindeer and his elves and other helpers of his, so he up and moved himself, Mrs Santa and everybody and everything else – to the North Pole, FINLAND 🇫🇮 (! I still can’t believe it, but in many ways, us up here @ and around the North Pole are one people, the Nordic People). Anyways…Since it is time for Pride many places now (some places celebrate in September here too!): Happy Pride! The roasted mustard seeds/rai seeds have a similar taste as popcorn. It wasn't peanut. We use same tarka/chonk/bhagaar on daal/lentils and it still tastes like popcorn. The buttery taste obviously comes from the ghee. But ghee itself doesnt make it taste like popcorn.
I love Priya's personality but I think her skills in Indian cooking are average. But I guess that is what she is aiming for; make things easy an accessible for people new to Indian cooking and she does a great job at that!

Ok….if your mustard seeds don't pop once you put them in oil, you should go back to your mama and apologise for calling her a manic…as she knows that un-poped seeds on medium heat give a bad bitter flavour. That is why even with mustard oil, you cook only when it's smoking hot.
