Jeera Rice (Cumin Rice) Recipe by Manjula


Today I will be making jeera rice. Rice flavoured with cumin seeds jeera rice is a delicious side dish which goes well with any meal and makes it festive. This recipe will serve four. To make jeera rice, we will need: One cup of rice. I prefer Basmati rice. 2 teaspoon of oil, I use canola oil. 1 teaspoon of cumin seeds (jeera). 1/4 teaspoon of salt. 4 whole red chillies. Make sure they are not broken. We want to flavour the rice, not make it hot. 2 bay leaves. 2 cardamoms and about
1 inch cinnamon stick. Approximately 1/4 cup cilantro finely chopped (hara dhania). 2 tablespoon clarified butter (ghee). We will use this to garnish the rice. And 2 cups of water. I am ready to make the jeera rice. I have already washed the rice and soaked it in lukewarm water for about 15 minutes and drained the water. Heat is on, medium high. So first I will put the oil. Oil should be moderately hot so when we put the cumin seeds, they should crack right away. So oil is ready. So we put the cumin seeds and put all the dry spices. Red chilli, bay leaves, cardamom and cinnamon stick. Just stir for few seconds and now put the rice. Stir fry for about a minute. This has been about a minute. So now I will add the water. And salt. Mix it. And bring the rice to boil. Rice has come to boil. So now lower the heat to low and cover the pan. It should take about 15 minutes. You can stir one time in between, but don’t keep opening the pot and stirring because rice will not cook right. It has been about 13 minutes. So I will just check the rice. This should be almost ready. Just check that it is done. Just cover it for 1 more minute and rice will be ready. Its been about a minute. So let’s check it again. And rice is looking very good, just very tender and grains are very long. Now I am going to add the cilantro. Just gently fold the rice with cilantro. It gives the very nice green colour. Just a touch of green. And turn off the heat. I will just garnish the rice with clarified butter or ghee. I think just 1 tablespoon is enough. It is looking beautiful and has a beautiful aroma. Garnishing the rice with ghee, it is optional. Jeera rice is very aromatic and flavourful. I always prefer making jeera rice for get together instead of plain rice. It enhances the meal. Enjoy.   2. I know you're Jain which is why all the food you make is vegetarian. But out of curiosity, what region of India are you originally from? The reason for asking is because most Indian food I'm familiar with is Punjabi, and these peppers and oils seem more like Rajasthani or Maharashtrian. Just wondering, thanks. 🙂
